Welcome to Bologna, the vibrant heart of Emilia-Romagna and one of Italy’s most beloved food capitals. Known as “La Grassa” — “the Fat One” — Bologna is a city that lives and breathes its culinary traditions. Here, food is more than nourishment; it’s a form of art, love, and identity shared around every family table.
In this land of rich flavors and warm hospitality, the art of fresh pasta has been perfected over centuries. From delicate sheets of golden dough come creations like tagliatelle, lasagne, and the world-famous tortellini, tiny hand-shaped masterpieces said to be inspired by the navel of Venus herself. Each one is a symbol of care, patience, and passion — values that define the true Bolognese spirit.
Visit to a fresh pasta workshop to learn how to make homemade egg pasta. Hands-on class with our Sfoglina, lasting about 2 hours, to learn the techniques of kneading dough, using the rolling pin and making fresh Bolognese pasta (tortellini, tortelloni and tagliatelle). The cooking class ends with a tasting of the pasta prepared with the help of the Sfoglina.
